Making Holiday Cookies

During the week before winter break, the Basic class was busy making holiday cookies.

On Monday, they watched a video about making cookies and learned all the names for the ingredients and measurements.

On Tuesday, they mixed up the dough.

At first, some are dubious that cookie dough will ever taste good

On Thursday, they mixed up frosting and decorated the cookies. Some of the cookies went to our friends at Arlington Hills Lutheran Church. The rest of the cookies went home for families.

After the class finished decorating and delivering the cookies, they worked with Jen to write a class story about their experience.

"Yesterday we made cookies. Today, we decorated cookies. We quickly mixed powdered sugar, water, and food coloring. Sa Ki Na made yellow frosting. Eh Ka Naw made green colored sugar. We put the frosting and colored sugar on the cookies. We were happy. We washed our hands, the bowls and the tables. We put the cookies on the plate. We put plastic over the cookies. We wrote Happy Holidays on the plastic. We sang the Jingle Bells song. We gave the cookies to Mr. Jim and to the office. We said Merry Christmas and Happy New Year!"

On Wednesday, November 23rd, we had our annual Thanksgiving Party at Arlington Hills. There were over 90 learners that attended, plus about 20 volunteers, teachers, and special guests. Somehow we managed to feed them all!

The men from Andrea's class took over the making of mashed potatoes with Teacher Kirsti supervising. They peeled 15 pounds of potatoes in all, but there were no leftovers at the end of the meal!

Teacher Jessica's students helped decorate for the event. They used turkey decorations that Rachel's Childrens English School students created the day before. Both the children and the tukeys were adorable!

Some of the women from Teacher Andrea's class helped Mrs. Wiehe hang up coats in the Alley Shoppe while we were setting up for the party. Every learner was able to take home two winter coats at the end of the party, as well as hats, boots, scarfs and mittens for themselves and their families. We are so lucky to be able to partner with the Alley Shoppe to help keep our learners warm.

Teacher Jessica's class preformed "Oh Susanna" for the school. It was very popular!

Teacher Andrea's class preformed "Down by the Riverside" They were really nervous because they were doing it from memory, but they did a wonderful job and sounded beautiful, so they shouldn't have worried.

Everyone at the party wrote their name and something that they were thankful for, and glued it on the "Tree of Thanks". The Arlington Hills Lutheran Church is displaying the tree in their lobby during the holiday season.

Teacher Marya, who was the only teacher with turkey-cooking experience under her belt, was in charge of the turkeys. They turned out delicious, and more importantly, no one came down with food poisoning! A HUGE thanks to Annelisa, Gail, Cathy, and Diane who chipped in to help us buy the turkeys.

Finally! After all of that work, it was time to eat. Many learners brought food to share, so we had the traditional Minnesota holiday foods of turkey, mashed potatoes, and stuffing, along with papaya salad, rice, taquitas, rice noodle dishes, and curry. Jim even baked apple pies that he served warm with ice cream. It was a delicious day.

Tricks and Treats

Jim, the head of maintenance from the Arlington Hills Lutheran Church, put on his annual trick pool shots show for the school. There were over 90 learners, teachers and children attending this year! Jim preformed original trick shots with volunteers from the audience, and everyone ate popcorn and got a salted nut roll to take home, courtesy of Jim. A great time was had by all!

Good-Bye Garden!

We said good-bye to our gardens for this year and got them ready for the winter.

Teacher Jessica's class, led by her sister Liz that day, took care of the courtyard tomato and chili pepper gardens. They stored the potting soil, sifted out the rocks for drainage, pulled the plants, and stacked up the pots. Some of the students took chili pepper plants home to try planting them in their apartments over the winter.

Teacher Marya's class took care of the outside church garden. They pulled up all of the plants and got them ready for Jim to take to the compost heap. They took down the fence and the sticks for trellising, and got them ready to store in the garage for the winter. It took us weeks and weeks to put everything up in and around the garden, and less than 10 minutes to take it all down.

The marigolds were still beautiful!

Teacher Andrea's class took down the Sue's Park garden. They pulled the fence, pulled all of the plants, and said good-bye until next year. We have to say a huge thank you to the wonderful Hmong family that allowed us to use their water for the garden so that we didn't have to carry water from the church. They saved our backs and arms from a lot of work!

Personal and Minnesota Histories Meet

We took an exciting trip to the Minnesota History Center today. The day started at 9:30 as the first group of 20 students boarded the 64 bus toward downtown. Over the course of an hour, over 80 students rode public transit and practiced feeding tickets and tokens into the bus. One group even had the authentic (although not intentional) experience of getting on the wrong bus and having to backtrack.

Once we got to the museum, Chong assumed the role of bus driver on this restored bus in the MN150 exhibit.

Eh Dah practiced conducting as he listened to the MN Orchestra.

The "Open House" exhibit gave everyone a chance to practice the vocabulary they're learning this month in the housing unit. Here, two students are playing in the "yard."

Many of the students made connections between their own wartime experiences and the displays in the "Greatest Generation" exhibit.

Say K Paw compared notes with an interpretive volunteer on food rations used in the U.S. during WWII and those used in the Thai Refugee Camp where he lived.

On the way back to the school we packed the bus with Arlington Hills learners. A few learners joked that today was "Karen Language Day" on the bus. Several students were soaked after having run through the downpour to get to the bus. Despite the rain, everyone seemed to have a good time.

Holiday Baking in Level A

Yesterday we made sugar cookies.
First we mixed the sugar and butter.
Second we added the vanilla and egg.
Third we added the baking soda and flour.
We mixed after every cup.
Fourth we divided the dough into half.
Fifth we rolled out the dough.
Sixth we dipped the cookie cutters in flour
and made cookies.
Seventh we baked the cookies for 8 to 10 minutes.
Today we will decorate the cookies and eat them.

Halloween~ Carving Jack-O-Lanterns and Roasting Pumpkin Seeds: Level B

First, we selected our pumpkins.
We cut off the lids.
We cut around the stems.

Next, we cleaned out the inside of our pumpkins.
We took out the seeds and the pulp.
We saved the seed for the cooks in the kitchen.
We threw away the pulp.
The pumpkins did not have very many seeds.
In Burma, the pumpkins had many more seeds.

We drew our faces on paper.
Then, we started to carve the pumpkins.

We carved eyes, noses, mouths, teeth, eyebrows, mustaches, and ears.

Ma La Ki took photographs the whole time.

Some people were carving pumpkins.

Other people were telling stories and laughing.

When the four pumpkins were done, we put them up on the counter.

We lit candles inside.
Now, they are called "Jack-O-Lanterns."

The Jack-O-Lanterns were beautiful.

We turned off the lights and watched them glow in the dark.The cooks in the kitchen mixed the seeds with oil and spices.

1 1/2 cups of seeds.
2 tablespoons olive oil.
Spices to taste.

Then, they spread the seeds on baking sheets.
They baked the seeds in the oven for 30 minutes.
The oven was set at 300 degrees.

Everyone liked the roasted pumpkin seeds.
They tasted very good.
By the end of the day, they were all gone!

Thoo Thoo and Chong were happy.

In my hometown most the drivers don't respec the signs,even if they see people walking on the street! So we have to watch all time and move to the side when they're coming,because if you don't do that they will run you over.
The bus drivers drive too fast to get more people first, because if another bus or taxi go before them they wont get enough people into it.
The other big problem is that, they overload the buses to get more money.For example if the bus has the capacity for 60 people they get more than 80 sometimes, so thats why we have accidents all the time.

I want to read about Karen history.
Most of Karen people in burma are having problems surviving.There are several main causes for this trend.The first reason is because of the pressure from burmese soldiers and the sccond reason is starvation.These are the major problems that Karen peoples have to face in their life.
The first reason that Karen people in burma are having problems surviving is because of soldier's pressure.Burmese soldier's come in to the village and destroy the farms,burn houses and villages have to flee away.When soldier's come in to a villages ,they are very cruel.They kill innocent children and rape women and young girls.Many men are arrested ,some men they bind their feet together and hang them upside down.Soldier's also catch and beat them with bamboo.Karen people have to be virtual slaves of the army.
The sccond reason that Karen people are faced with hunger because of the climate change.The climate is changing and they had a hurricane so they couldn't raise enough rice.Two years ago in burma,they had an extremely bad hurricane and destroyed many things in burma.Most of Karen houses were destroyed .They didn't have food to eat and many children were hungry and died Their farms were also not good for raising rice and that caused them a big problem.Some areas also didn't get enough rain for their farms and they couldn't do anything because most Karen people live by farming.
They were having problems surviving because of the war.In the Karen state ,they had a war between the burmese and Karen soldier's.Karen and burmese soldier's attacked eachother and villager did n't dare to stay in village and they had to hide in other places.They didn't have enough food and that caused disease.They didn't find shelter or get enough sleep .Some children cried,hungry and because of malnutrition.

I have many memories. I remember When I stayed in Burma, I didn't live with my parents. I live with my Grandparents. My Grandparents love me so much and I love my Grandparents more than I love my parents. When they went to the forest, I always fallowed them. I went to fishing with them and I was so excited. They are farmers. Every year,before they planted rice, They sent me to plant the rice first.I planted just two or three plants and they did everything else. Why did they do that? Because they love me so much. I felt their love like the sunshine, shining on the flowers. I got pleasure When I stayed with them. But When they die. I was very upset. I felt under the weather. After they die. I went to stay with my parents. My parents had many problems with the Burmese Soldiers,because they were slaves. Many people in my village had problems like my parents too. They had no job and they had no money but they always had to pay tax to the Burmese government. Then the Burmese soldiers came to burm our village. We couldn't stay there. So we ran away to the border. We ran we had to climb up and down mountains. We had no food. We ate the leaves and banana trees in the forest, and then we arrived at a refugee camp in thailand. When I was 14 years old my parents were divided.My mother went away and my father went away too. My brother and I stayed in the camp. My brother was 7 years old. I took care of my brother while. We had money, Just 20 Bath. I and my brother went to eat bread. If I bought it. I had no more money. I thought What can I do? and I made chocolate and sold it at School and my brother helped me too. When my brother got sick, I was very upset. I was worried he would die and my tears came down. I carried him on my back and then I brought him to the hospital. Sometimes I got sick. I couldn't do anything. My nelghbors loved me so much and my teachers love me so much too. They helped me, They brought me to the hospital and they cooked food for me. I love my nelgbors and my teachers so much because they were very kind to me. I will never for get their help. My studies didn't end and I wanted to study more but I had a problem. I didn't have money to buy food and to buy candle for reading. I found a job in the camp and soon after,We had an opportunity to come to the U.S.A. I decided to come to the U.S.A, but I couldn't speak English. Before I slept, I prayed every night. I belived Jesus would arrange everything for me.

Arlington Hills Learners in St. Paul Almanac

Four Arlington Hills learners published stories in the 2010 Saint Paul Almanac: Adan Gonzales, Chong Xiong, Sain Thin and Richard Shwe. Each learner received two copies of the book and a $75.00 award.

The person who influenced me most was my father. My father always did the right things, for example he taught me how to be a responsible person for the future. He had to work on the farm when he was only 13. He could not go to school.
My father suggested that it is important to keep studying. He always wanted me to be a very good person.
My father told me “you have to study because I want you to be a good person and learn about how to be responsible.” I went to the school and almost finished my career.
My father told me why it is important to keep studying because no body can lie to you if you know what the people are saying in any letter.
My father is the most important person in my life. He loved me unconditionally and He cared for me when I was a child. He was thinking about my future. He wanted me to have an easy job.

My mother influenced the most was my mother, because she was a happy person all the time. She was patient, and loved her kids very much.
My mother despite the hard situations she had in life always smiled and never complained, even if problem made her sad or angry, and just said be happy. Like when my father was without job for long time she found the way to help him.
She was patient. When we had troubles, always listened carefully and quietly; she gave us the possible solutions. My mom became sick very young but she never gave up; she was smiling and suffering patiently until she died.
The most important thing that showed was her love for all us, did not matter what happened she love her kids very much. Her love, patient and happiness, give me the inspiration. That dictates my mood.
Today I remember my mom and it helps me to be a better person. How to love everybody is the best thing I learned from her.

I see one woman. She is happy.

We wrote her name with clay.

I see many flowers from the garden.
First we scratch the clay.
Then we use glue to add flowers.

I from Thailand, I have bee in Minnesota seven months. Now I want to write about wedding in my Country. In my country, I saw many people get wedding. Before they get married they buy many foods to eat for wedding. They decorate the church very nice. They use a few time for wedding. Usually they get married at the church, but some people get married at office. They don’t have a car, So They walked at home to church. The bride wear a white dress and the bridegroom wear the white shirt and black coat and then wear the black pant or jeans. But some people wear the Karen nice clothing. And then when we hear the bell rings first time, The grooms men send the groom to the church first, and then when we hear the bell rings second time, The bridesmaid send the bride to the church too. When the people send the groom and bride, they sing the wedding songs. And flow the music. The Pastor makes their marriage, and they give the promise in front of the people and then the bride and groom with their parent and pastor singe on the married certificate. The pastor gives married certificate to groom and then the groom give to the bride. Some people sing a song for the bride and groom and then many people come to the wedding, and bring many gifts. They get many gifts. When they get married they take picture. That is vanish they go home and take many food to eat. They are very happy to get married that day.

So level ' A ' and 'B' decided to give wedding cards to her. and level 'C' wrote letters about wedding in their Country.And cook two cakes for the party. So two students of level 'C' read the wedding stories. After that the other teachers brought the dress for teacher Jen. And teacher Jen threw the flowers then all women try to catch it. After that everybody sang the wedding song. Finally teacher Jen and her husband cut the cakes and all students ate together, and some people took a picture.
